Under bagningen vil der blive dannet gasser, der frigives som sm\u00e5 bobler i dejen, hvorved dejen h\u00e6ver og bagv\u00e6rket bliver luftigt.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">Natron forhandels i dagligvarebutikker til tider under navnet \u201ctvekulsurt natron\u201d eller p\u00e5 engelsk \u201csodium bicarbonate\u201d. Formlen for natron er \\(NaHCO_3\\) og er derfor et salt best\u00e5ende af en natriumion, \\(Na^+\\) og en hydrogencarbonation, \\(HCO_3\\) og vil derfor have det systematiske navn <em>natriumhydrogencarbonat<\/em>.<\/p>\n\n\n\n<p class=\" eplus-wrapper\">N\u00e5r natron opvarmes er der mulighed for tre forskellige reaktioner hvorved det dekomponeres.
